Vegetables
- 1 pound carrots (about 1 large or 2 medium bunches, cut into 2-inch barrels)
Seasonings
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon sea salt
- Freshly ground black pepper, to taste
Garnish
- Chopped fresh parsley (for garnish)
Instructions
- Preheat oven: Preheat the oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper for easy cleanup.
- Toss carrots: In a large bowl, combine the carrots with olive oil, honey, sea salt, and several grinds of freshly ground black pepper. Toss well to coat the carrots evenly.
- Arrange and roast: Spread the carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 25 minutes, or until the carrots are fork-tender and lightly browned but not mushy. The exact time depends on the size of the carrot pieces.
- Season and garnish: Remove the carrots from the oven, taste and adjust seasoning if needed. Garnish with chopped fresh parsley before serving.
Notes
- Use honey or maple syrup to enhance the natural sweetness of the carrots.
- Cut carrots uniformly to ensure even roasting.
- Adjust roasting time based on carrot size – smaller pieces cook faster.
- For extra flavor, add a sprinkle of smoked paprika or a squeeze of fresh lemon juice before serving.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
