Ingredients

Units Scale

Pork Souvlaki Marinade

  • 1 lb butterflied boneless pork loin chops, sliced in 1/2 inch strips
  • 1/2 onion, thinly sliced
  • 2-3 fresh herb sprigs (rosemary, thyme, or oregano)
  • 2 garlic cloves, minced
  • 1/2 cup olive oil
  • 1 tablespoon honey
  • 2/3 cup white wine vinegar
  • Sea salt, to taste
  • Freshly ground pepper, to taste

Tomato and Feta Salad

  • 2 ripe tomatoes, chopped
  • 1/2 cup Greek feta cheese, cubed or crumbled
  • 1/2 onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon white wine vinegar
  • Dried oregano, to taste
  • Sea salt, to taste

Additional Ingredients

  • 1/2 cup tzatziki sauce
  • 8 Greek pita breads
  • Extra virgin olive oil, for brushing pita bread

Instructions

  1. Prepare the marinade: In a bowl, whisk together olive oil, white wine vinegar, honey, minced garlic, sliced onion, fresh herb sprigs, sea salt, and freshly ground pepper to create the marinade for the pork.
  2. Marinate the pork: Add the sliced pork loin strips to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour to allow flavors to develop.
  3. Prepare the tomato and feta salad: In a separate bowl, combine chopped tomatoes, crumbled feta, thinly sliced onion, extra virgin olive oil, white wine vinegar, dried oregano, and sea salt. Toss gently and set aside to marinate slightly.
  4. Cook the pork souvlaki: Preheat a grill or stovetop grill pan over medium-high heat. Thread the marinated pork strips onto skewers if available. Cook the pork for about 4-5 minutes per side, or until fully cooked and nicely charred. Remove from heat and let rest briefly.
  5. Warm the pita bread: Brush each pita with extra virgin olive oil and warm them on the grill or in a dry skillet until soft and slightly toasted.
  6. Assemble the souvlaki: Place cooked pork strips onto each warm pita. Add a generous spoonful of tomato and feta salad and a dollop of tzatziki sauce on top.
  7. Serve: Fold the pita around the fillings and serve immediately, enjoying the fresh and vibrant Greek flavors.

Notes

  • Marinate the pork for at least 1 hour or up to overnight for deeper flavor.
  • If skewers are unavailable, cook pork strips directly in a grill pan or skillet.
  • Tzatziki sauce can be homemade or store-bought depending on convenience.
  • Use fresh herbs like oregano or thyme for the most authentic taste.
  • To keep pita warm, wrap in a clean kitchen towel after warming.
