Description

These Rainbow Fruit Skewers are a vibrant and healthy snack featuring a colorful array of fresh fruits drizzled with melted dark chocolate and a touch of flaky sea salt. Perfect as a fun treat or light dessert, these skewers offer natural sweetness combined with the richness of chocolate, making them both delightful and nutritious.

Ingredients

Scale

Fruits

  • 6 strawberries, hulled
  • 1 orange, peeled, segmented and cut in half
  • 1/2 of a ripe pineapple, peeled, cored and cut into 1-inch chunks (about 1 1/2 cups pineapple chunks)
  • 1 banana, cut into 1-inch slices
  • 2 kiwi fruits, peeled and cut into 1-inch chunks

Chocolate Drizzle

  • 1 bar semi-sweet or dark chocolate, vegan or dairy free if desired
  • Optional: flaky sea salt

Instructions

  1. Prepare the Fruit Skewers: Arrange the prepared fruit pieces onto wooden skewers in rainbow order: strawberry, orange, pineapple, banana, kiwi. Place the finished skewers on a large plate or on a baking pan lined with parchment or wax paper to prevent sticking.
  2. Melt the Chocolate: Break the chocolate bar into small pieces and place them in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until the chocolate is completely melted and smooth.
  3. Drizzle Chocolate Over Skewers: Using a spoon or fork, drizzle the melted chocolate evenly over the fruit skewers. If desired, sprinkle a pinch of flaky sea salt on top to enhance the flavor.
  4. Set the Chocolate: Place the plate with the chocolate-drizzled fruit skewers into the freezer for 5 minutes or until the chocolate hardens and sets. Once firm, the skewers are ready to enjoy.

Notes

  • Use ripe, fresh fruits for the best flavor and vibrant colors.
  • To keep the chocolate drizzle vegan or dairy-free, choose appropriate chocolate bars labeled accordingly.
  • If you don't have a microwave, melt the chocolate gently in a double boiler on the stovetop.
  • Flaky sea salt is optional but adds a nice contrast to the sweetness of the fruit and chocolate.
  • These skewers are perfect for parties, kids’ snacks, or a quick, healthy dessert.
