Description

Delight in these colorful Lucky Charms Rice Krispie Treats, a nostalgic no-bake dessert that combines the classic gooey marshmallow base with the fun crunch of Lucky Charms cereal. Perfect for parties, snack time, or any occasion that calls for a sweet and chewy treat.

Ingredients

Units Scale

Base Ingredients

  • 1/2 cup unsalted butter
  • 16 ounces marshmallows (large or small)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Cereal Mix

  • 1 cup Rice Krispies cereal
  • 6 cups Lucky Charms cereal

Instructions

  1. Prepare the Pan: Grease a 9" x 9" pan with butter or nonstick cooking spray, or line it with parchment paper to prevent sticking. Using a square pan creates thick treats, while a rectangle pan will yield thinner pieces.
  2. Melt the Marshmallows: Spray a large mixing bowl with cooking spray to prevent sticking. Add marshmallows and microwave in 30-second intervals until melted and puffy, or alternatively, melt them in a large saucepan over low heat on the stove.
  3. Add Butter, Salt, and Vanilla: Quickly add the butter, salt, and vanilla extract to the melted marshmallows. Stir continuously until the butter has melted and the mixture is smooth and combined.
  4. Combine Cereals: Reserve a few colorful Lucky Charms marshmallows for topping. Add the Lucky Charms cereal and Rice Krispies cereal one cup at a time to the marshmallow mixture, stirring thoroughly after each addition to evenly coat.
  5. Press into Pan: Pour the cereal mixture into the prepared pan. Using a spatula coated lightly with cooking spray or well-sprayed hands, press the mixture evenly into the pan and into the corners for a compact layer.
  6. Add Topping: Sprinkle the reserved Lucky Charms marshmallows on top while the mixture is still warm to help them stick.
  7. Set the Treats: Allow the treats to cool and set at room temperature, or speed up the process by freezing them for 20 minutes until firm.
  8. Cut and Store: Run a knife around the edges to loosen the treats, then cut into 9 equal squares. Store in an airtight container or wrap individually in plastic wrap, keeping at room temperature for up to 3 days. For the best texture, leave them out overnight for a slightly chewy softness.

Notes

  • For easy spreading and less sticking, coat your spatula and hands with cooking spray before pressing the mixture into the pan.
  • Substitute mini marshmallows with regular size marshmallows if preferred; just adjust melting time accordingly.
  • Use a combination of colorful Lucky Charms marshmallows and cereal pieces to maximize the fun and flavor.
  • To keep treats fresh longer, store airtight in the refrigerator and allow to come to room temperature before serving.
  • These treats are best enjoyed within 3 days for optimal texture and flavor.
