Instructions
- Prepare the Pan: Grease a 9" x 9" pan with butter or nonstick cooking spray, or line it with parchment paper to prevent sticking. Using a square pan creates thick treats, while a rectangle pan will yield thinner pieces.
- Melt the Marshmallows: Spray a large mixing bowl with cooking spray to prevent sticking. Add marshmallows and microwave in 30-second intervals until melted and puffy, or alternatively, melt them in a large saucepan over low heat on the stove.
- Add Butter, Salt, and Vanilla: Quickly add the butter, salt, and vanilla extract to the melted marshmallows. Stir continuously until the butter has melted and the mixture is smooth and combined.
- Combine Cereals: Reserve a few colorful Lucky Charms marshmallows for topping. Add the Lucky Charms cereal and Rice Krispies cereal one cup at a time to the marshmallow mixture, stirring thoroughly after each addition to evenly coat.
- Press into Pan: Pour the cereal mixture into the prepared pan. Using a spatula coated lightly with cooking spray or well-sprayed hands, press the mixture evenly into the pan and into the corners for a compact layer.
- Add Topping: Sprinkle the reserved Lucky Charms marshmallows on top while the mixture is still warm to help them stick.
- Set the Treats: Allow the treats to cool and set at room temperature, or speed up the process by freezing them for 20 minutes until firm.
- Cut and Store: Run a knife around the edges to loosen the treats, then cut into 9 equal squares. Store in an airtight container or wrap individually in plastic wrap, keeping at room temperature for up to 3 days. For the best texture, leave them out overnight for a slightly chewy softness.
