Ice Cream Base
- 1 1/2 cups whole milk
- 2 1/2 cups heavy cream
- 1 cup white sugar
- 1 tsp vanilla extract
Cereal and Marshmallows
- 2 cups Lucky Charms cereal (grain part only, no marshmallows)
- 1 cup Lucky Charms marshmallows
Instructions
- Mix dairy and sugar: In a large bowl, stir together whole milk, heavy cream, sugar, and vanilla extract for about 2 minutes until the sugar starts to dissolve completely.
- Infuse cereal flavor: Pour in the Lucky Charms cereal and gently fold it into the milk mixture. Cover and refrigerate for at least 2 hours or up to overnight to allow the cereal to infuse the milk.
- Strain mixture: Pour the mixture through a strainer to remove all cereal pieces. Use a rubber spatula to press down on the cereal and extract as much flavorful milk as possible.
- Churn ice cream: Pour the strained milk mixture into your prepared ice cream maker and churn following the manufacturer’s instructions until it reaches soft-serve consistency.
- Layer marshmallows: Scoop some churned ice cream into a 5-quart bread pan, then sprinkle about one third of the Lucky Charms marshmallows on top. Carefully fold them evenly throughout using a knife or spoon. Repeat with remaining ice cream and marshmallows.
- Top and freeze: Add a few extra marshmallows on top. Cover the pan and freeze the ice cream for 6 hours or overnight to firm up before serving.
Notes
- Use only the grain part of Lucky Charms cereal for the milk infusion to keep the base smooth and creamy.
- Chilling the cereal milk mixture for several hours enhances the flavor deeply.
- Pressing the cereal during straining extracts maximum flavor and sweetness.
- You can substitute heavy cream with half-and-half for a lighter version but expect less creamy texture.
- If you don’t have an ice cream maker, you can freeze the mixture in a sealed container and stir every 30 minutes to break up ice crystals for about 3 hours.
