Description

These Irish Soda Bread Muffins are an easy and delicious twist on traditional soda bread, featuring tender crumb studded with sweet raisins and topped with sparkling sugar.   • 2 1/4 cups (270 g) all-purpose flour (spooned and leveled)
  • 2 teaspoons baking powder

  • 1 1/3 cups (200 g) raisins

Instructions

  1. Preheat and prepare pan: Preheat the oven to 400°F (200°C). Line a standard 12-cup muffin pan with paper liners or generously grease the wells and tops of the pan with non-stick spray or butter.
  2. Mix dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, sugar, and raisins until evenly combined.
  3. Combine wet ingredients: In a separate small bowl or measuring cup, whisk together the egg, buttermilk, and melted butter until smooth and well blended.
  4. Mix batter: Pour the wet ingredients into the dry ingredients. Using a wooden spoon or spatula, stir gently until just combined and no dry flour remains. Be careful not to overmix to avoid tough muffins; the batter will be stiff.
  5. Fill muffin cups: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full. The batter will be mounded on top of the cups. Sprinkle sparkling sugar over each muffin for a crunchy topping.
  6. Bake: Bake in the preheated oven for 20 minutes or until a cake tester inserted into the center of a muffin comes out clean and tops are golden.
  7. Remove and cool: Remove muffins from the oven and tip the pan to release the muffins so their bottoms don’t become soggy. After 5 minutes, transfer the muffins to a wire rack to cool completely.

Notes
