Instructions
- Prepare Chocolate Pudding: In a bowl or stand mixer, combine the instant chocolate pudding mix with 2 cups of milk. Beat on low speed for about two minutes until well incorporated. Chill the mixture for about 5 minutes until set.
- Make Green Vanilla Mousse: In a separate bowl, combine heavy cream and instant vanilla pudding mix. Mix on low speed until combined, then increase speed and whip until light and fluffy. Beat in 1/2 teaspoon vanilla extract, then add green food coloring gradually until you reach the desired shade. Chill for 5 minutes.
- Crush Oreos: Place the Oreo cookies in a food processor and pulse until they are crumbled into small pieces but not fine crumbs.
- Assemble Layers: Divide the chocolate pudding evenly among eight 8-ounce cups for the first layer. Add a layer of green vanilla mousse on top, followed by a layer of Oreo cookie crumbs, then a layer of whipped topping. Repeat layering with chocolate pudding, green mousse, Oreo crumbs, and finish with whipped topping.
- Decorate: Cut each Airhead Extreme sour belt in half, bend into a rainbow shape and place on top of the whipped topping in each cup. Add a chocolate gold coin, sprinkle gold sprinkles, and sprinkle additional Oreo crumbs to finish the presentation.
