Instructions

  1. Hard boil the eggs: Cook the eggs according to your preferred method until hard-cooked, approximately 10 minutes if boiling on stovetop or using an Instant Pot. Then transfer to cold water to cool.
  2. Peel and halve the eggs: Once cooled enough to handle, carefully peel the eggs and slice each egg in half lengthwise.
  3. Prepare the filling: Scoop the yolks into a bowl and mash with mayonnaise, Dijon mustard, lemon juice, and ripe avocado until the mixture is smooth and creamy. Season with salt and pepper to taste.
  4. Fill the whites: Pipe or spoon the yolk mixture back into the cavity of the egg whites, creating a tall swirl that resembles a Christmas tree shape.
  5. Add garnishes: Sprinkle crushed red pepper flakes or place small red pepper pieces or pomegranate seeds onto the filling to mimic ornaments on the Christmas tree.
  6. Cut and place stars: Use a 1-inch star-shaped cookie cutter to cut 12 stars from the yellow bell pepper and place one star at the top of each deviled egg tree for a festive look.
