Scale
Eggs & Filling
- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice (freshly squeezed)
- ½ large ripe avocado
- Salt & pepper to taste
- Crushed red pepper flakes or red pepper pieces for garnish
Decorations
- 1 large yellow bell pepper
Instructions
- Hard boil the eggs: Cook the eggs according to your preferred method until hard-cooked, approximately 10 minutes if boiling on stovetop or using an Instant Pot. Then transfer to cold water to cool.
- Peel and halve the eggs: Once cooled enough to handle, carefully peel the eggs and slice each egg in half lengthwise.
- Prepare the filling: Scoop the yolks into a bowl and mash with mayonnaise, Dijon mustard, lemon juice, and ripe avocado until the mixture is smooth and creamy. Season with salt and pepper to taste.
- Fill the whites: Pipe or spoon the yolk mixture back into the cavity of the egg whites, creating a tall swirl that resembles a Christmas tree shape.
- Add garnishes: Sprinkle crushed red pepper flakes or place small red pepper pieces or pomegranate seeds onto the filling to mimic ornaments on the Christmas tree.
- Cut and place stars: Use a 1-inch star-shaped cookie cutter to cut 12 stars from the yellow bell pepper and place one star at the top of each deviled egg tree for a festive look.
Notes
- Use ripe avocado for a smooth and creamy filling texture.
- To speed up egg peeling, peel them under running water or after cracking the shells gently.
- Alternative garnishes like pomegranate seeds provide a sweet and tart twist to the red pepper flakes.
- These deviled eggs are best served chilled, making them ideal to prepare in advance and refrigerate before serving.
- For added flavor, you can mix a pinch of smoked paprika into the yolk filling.
- The yellow bell pepper stars add a crunchy texture and bright color to complement the creamy eggs.
