Description

A festive and colorful Christmas Poke Cake combining white cake, strawberry and lime jello, vanilla pudding topping, and holiday sprinkles for a delightful holiday dessert.

Ingredients

Scale

Cake

  • 1 (15 oz) box white cake mix, plus ingredients called for on box

Jello

  • 1 (6 oz) box strawberry jello
  • 1 (6 oz) box lime jello
  • 2 cups boiling water

Topping

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1 cup milk
  • 1 (8 oz) container frozen whipped topping, thawed
  • Red and green sprinkles or decorations

Instructions

  1. Prepare cake: Preheat oven to 350°F or temperature called for on cake mix package. Grease a 9x13-inch baking dish with butter or nonstick spray. Mix the cake mix with ingredients required on the box. Pour batter into the prepared dish and bake according to package directions.
  2. Poke holes: Remove cake from oven and let cool for 15 minutes. Using a fork or handle of a wooden spoon, poke holes in the cake at 1-inch intervals. Let cake cool further while preparing jello.
  3. Make jello: In two separate bowls, dissolve each box of jello in 1 cup boiling water, stirring until completely dissolved.
  4. Add jello to cake: Pour the green and red jello in alternating rows over the cake, allowing the liquid to sink into the holes. You may not need to use all the jello liquid.
  5. Chill cake: Place the cake in the refrigerator and chill for 15 minutes to allow the jello to set.
  6. Prepare topping: Whisk together instant vanilla pudding mix and milk until thickened. Fold in thawed whipped topping gently until combined.
  7. Apply topping: Spread the pudding and whipped topping mixture evenly over the chilled cake. Return cake to the refrigerator and chill for an additional 2 hours.
  8. Garnish and serve: Before serving, sprinkle red and green sprinkles or decorations on top for a festive look. Enjoy your Christmas Poke Cake!

Notes

  • The festive flavor runs all the way through the cake thanks to the alternating jello layers.
  • Use a fork or the handle of a spoon to create evenly spaced holes that allow the jello to soak inside the cake.
  • If you prefer, substitute lime and strawberry jello flavors with other festive colors or flavors.
  • Ensure the cake is sufficiently cooled before poking with the fork to avoid breaking it apart.
  • Chilling the cake for at least 2 hours ensures the pudding topping sets properly for clean slices.
  • Use fresh red and green sprinkles for vibrant decoration, or add edible glitter for extra sparkle.
