Ingredients
Scale
Meatloaf
- 2 pounds ground beef
- 1 small onion, finely diced (about 1 cup diced)
- 4 garlic cloves, minced
- 2 large eggs
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- ⅔ cup quick-cooking oats
- ⅓ cup milk
- 2 tablespoons finely chopped fresh parsley
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
Glaze
- ½ cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon coconut sugar or brown sugar
Instructions
- Combine ingredients. In a large mixing bowl, add the ground beef, finely diced onion, minced garlic, eggs, ketchup, Worcestershire sauce, quick-cooking oats, milk, fresh parsley, Italian seasoning, kosher salt, and ground black pepper. Using your hands, mix everything together gently until well combined, being careful not to over-mix to keep the meatloaf tender.
- Form a loaf. Shape the mixture into a roughly 9x5-inch loaf on a rimmed baking sheet or casserole pan. Alternatively, you may place the mixture into a loaf pan for a more uniform shape.
- Coat with the glaze. In a small bowl, stir together the ketchup, Worcestershire sauce, and coconut or brown sugar until smooth. Brush the glaze evenly over the top of the meatloaf, coating it thoroughly for a flavorful crust.
- Cook. Preheat your oven to 350°F (175°C). Place the prepared meatloaf in the oven and bake for 50 minutes, or until the internal temperature reaches 160°F (70°C) when checked with a meat thermometer.
- Slice and serve. Remove the meatloaf from the oven and let it rest for 10 minutes to allow juices to redistribute. Slice into 8 servings and serve warm.
Notes
- For best results, avoid over-mixing the meat mixture to keep the meatloaf tender and moist.
- The glaze adds a flavorful, slightly sweet crust – don’t skip this step for classic taste.
- If you prefer a lower-carb version, substitute oats with crushed pork rinds or almond flour.
- Letting the meatloaf rest after baking helps maintain juiciness when sliced.
- You can swap ground beef with a mixture of ground beef and pork for added flavor and juiciness.
