- 16 oz. Cabot Monterey Jack cheese
Dough
- 2 1-pound balls of pizza dough
Butter Mixture
- 4 Tbsp unsalted butter (melted)
- 1 Tbsp chopped fresh parsley (plus more for garnishing)
- ½ tsp kosher salt
- ½ tsp dried oregano
- ½ tsp garlic powder

Instructions
- Preheat Oven. Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper. Set the prepared baking sheets aside for later.
- Prepare Cheese. Cut one block of the Monterey Jack cheese lengthwise into 8 long pieces. From the second block, cut only half the block lengthwise into 4 long pieces, creating a total of 12 long cheese pieces. Grate the remaining half block of cheese and set both the long pieces and shredded cheese aside.
- Roll Dough. On a lightly floured work surface, roll each 1-pound ball of pizza dough into a 10” by 18” rectangle, ensuring the dough is even and smooth.
- Assemble Breadsticks. Lay one rolled dough rectangle on a large cutting board. Evenly line up the 12 pieces of long cheese across the length of the dough, then sprinkle the shredded cheese evenly on top. Place the second rolled dough rectangle on top.
- Seal Cheese Inside. Press the two dough layers tightly together to seal around each piece of cheese completely. Using a pizza cutter or sharp knife, cut between each piece of cheese to create 12 individual stuffed breadsticks. Pinch the dough edges tightly around each cheese piece to prevent leakage during baking.
- Prepare for Baking. Transfer the stuffed breadsticks onto the prepared baking sheets, spacing them evenly.
- Bake Breadsticks. Bake in the preheated oven for 16-18 minutes or until the breadsticks turn lightly golden brown and the cheese inside is melted.
- Make Garlic Butter. While breadsticks bake, whisk together melted butter, chopped parsley, kosher salt, garlic powder, and dried oregano in a small bowl.
- Brush and Serve. Remove the breadsticks from the oven and immediately brush the tops generously with the garlic butter mixture. Garnish with extra parsley if desired and serve hot with marinara sauce for dipping.
Notes
- Use fresh parsley for the best flavor in the garlic butter but dried parsley can work in a pinch.
- If you don't have Monterey Jack cheese, any good melting cheese like mozzarella or provolone can be used.
- Make sure to pinch dough edges tightly around the cheese to avoid leaks and maximize cheesy goodness.
- Brush the breadsticks with the garlic butter while they are still hot to allow it to soak in better.
- Serve immediately for the best melty texture; leftovers can be reheated in the oven for a few minutes.
- These breadsticks make a great appetizer or snack and pair perfectly with marinara or your favorite dipping sauce.
